Local cuisine
One of the fundamental pillars of D’Excaro’s cuisine is the use of local products. A gastronomic model with which we invite our guests to experience sensations from other parts of the world with the use, to a large extent, of products from our beloved land, the Valencian Community.
Thanks to our commitment, we have small and medium-sized suppliers in our kitchen, contributing our small grain of sand to the promotion of the local economy of Alicante and Valencia. Proof of this is the use of products such as Entrepiedras flour (Callosa de Segura), Octobris (Villena) and Rontonar oils, wines from Bodega Nodus (Caudete de las Fuentes, Els Marges (Jávea), Clos de Lom (Ontinyent) and vegetables from L’Hort de Neli (Pedreguer).
On the other hand, respect for the environment is another of our fundamentals that flows from the very water served in the restaurant, filtered and treated by osmosis to avoid the consumption of plastic bottles, to the vegetables from small farmers in our area, grown with respect for our environment.
In short, D’Excaro through its Ossadia menu and the Urban Food menu, has sealed a strong commitment to the use of top quality products from suppliers in the provinces of Alicante and Valencia. Thanks to the excellent location of Denia on the map, we have a wide gastronomic wealth sustained by the products of proximity and care for our environment.
