Creamy rice from the lagoon, with marrow, ribs, and Valencian almond and samorreta sauce.

Roasted lobster topped with Rockefeller sauce made with baby spinach, Parmesan cheese, and Pernod. Gratinated with Béarnaise sauce and capers.

Gravlax-style fish, Thai tiger milk with passion fruit and coconut, fennel and ginger pickled in herb oil.
